8 oz filet of swordfish
1/2 tbsp Earth Balance Vegan butter (can also use oil)
Favorite fish seasoning (I used Sunny Paris by Penzey's Spices)
Salt and pepper
Lemon juice (fresh from 1/2 of lemon)
Turn broiler on high.
Rub both sides of fish with your favorite fish seasoning. Add a sprinkle of salt, garlic powder, and fresh ground pepper. (Don't use salt if seasoning already includes it)
Use broiler pan, or put foil on cookie sheet.
Place slab of butter on center of pan in small slices and lay fish on top.
Squeeze fresh lemon over filet
Put in oven 2-3 inches from broiler for 3-4 minutes (2-3 if a thinner than 1")
Keep oven door cracked open while broiling
Flip fish and squeeze a little more juice on top
Put back in broiler for 2-3 more minutes (may need an extra minute...open and check for doneness)
Fish should be opague when done, however, the fish will continue to cook when removed, so feel free to take it out when it's nearly opaque, sit on counter and it will cook through. Just check again before eating.
